A VEGAN & HEALTHY ALTERNATIVE OF THE DELICIOUS LASAGNE

If you have followed me for a while now you will know I love to live a healthy lifestyle and I love to create for myself and client’s recipes where you don’t have to miss out on yummy foods that they are fulfiling, nutritious & get your taste buds going. This way you don’t have to compromise and can enjoy your new healthy life style. 

This recipe is one of my favourites for when you are wanting something more hearty but healthy. I love the flavour of the butternut squash with the chive @nushfoods dairy free cream cheese and then the lentils help make you feel fuller for longer. 

Ingredients

This recipe :- Makes enough for 4 people

1 pack of Sainsbury’s butternut squash lasagne sheets

250g of Nush dairy free Chive cream cheese

1 tin of chopped tomatoes

1 cup of pre cooked lentils

100g of spinach

200g mushrooms

1 cup of peas

1tsp black pepper

1tsp paprika

1tsp basil

1tsp Oregano

1tsp

1clove of garlic

Method

  • I like to soak my lentils over night this helps with digestion and taste. I then pre cook them for the recipe.

  • Pre heat your oven to 200deg. Cooking time 25/30 mins

Tomato lentil sauce

  • In a mixing bowl mix the tin of chopped tomatoes, herbs and spices and lentils until lentils are all covered.

Cream rags sauce

  • In a frying pan drizzle either avocado or rapseed oil. Add the mushrooms and spinach. Wait until spinach has softened down. Now add in the Nush cream cheese and pease. Cook until the cream cheese has melted and covered all of the veg.

Layer up the lasagne

  • Now for the good part ;). Layer up in four layers. Start with the Ragoo for the first two layers then the tomato sauce and then the sheets. It doesn’t have to loo perfect as all holds and cooks together once in the oven. For the last two layers I add the tomato sauce first so that when I get to the top layer the cream cheese goes a little crispy once baked.

  • If you are feeling fancy serve with some basil leaves and pine nuts on top.
