HEALTHY VEGAN BLUEBERRY BANANA BREAD
THE PROBLEM WITH MOST OTHER BANANA BREAD RECIPES IS THAT THEY CONTAIN DAIRY, EGGS, REFINED SUGAR, AND OIL — THINGS THAT I DO NOT CONSUME OR INCLUDE IN WHAT I CONSIDER A HEALTHY DIET. SO I DECIDED TO MAKE MY OWN WHICH NOT ONLY IS IT VEGAN IT IS GLUTEN AND SUGAR FREE. ONLY MADE WITH NATURAL SUGARS FROM DATES ;). THESE SUGARS ARE EASILY PROCESSED AND UTILIZED BY THE BODY FOR ENERGY. THE SWEET FRUIT IS ALSO BRIMMING WITH VITAMINS, MINERALS, AND HEALTHY FIBER.
I LOVE HAVING THIS ON ITS OWN FOR A ON THE GO SNACK OR HEATED UP WITH A DAIRY FREE YOGURT FOR A YUMMY DESERT (UK BRAND KOKO DAIRY FREE AND US BRAND KITE HILL)
Ingredients
3 Medium Bananas (make sure they are very brown and spotty!)
2 1/2 cup Gluten free Rolled Oats, divided (not Instant)
1 teaspoon cinnamon
1/4 cup peanut or almond Butter
2 tbsp Ground Flax OR Ground Chia Seeds + 6 tbsp Water
1 tbsp Baking Powder
1 tsp Vanilla Extract
1/2 tsp Salt
+ 1 banana to top, sliced it in half lengthwise (optional)
1/2 cup pitted Medjool dates, packed
½ cup unsweetened non-dairy milk
Want a nutty twist use raw walnuts (1/2 cup) or feel free to add whatever type of nuts, seeds, dried fruit and superfoods you like!
Method
Preheat oven to 350°F and line a 9×5″ bread pan with parchment paper.
In a small bowl, combine the Ground Flax OR Ground Chia seeds with 6 tbsp water to form an “egg.” Stir and set aside for 5-10 minutes.
In a large bowl, add the oat flour, baking powder, salt, cinnamon, and nuts if using. Mix well until uniform and set aside (to make oat flour blend oats in a blender until it forms a powder).
In a food processor, add the dates, almond milk, almond/peanut butter and vanilla extract. Process until smooth, then mix in the mashed banana and flax/chia egg with a spoon until combined. Add the date and banana mixture to the dry mixture and stir until a batter forms and mix until lumps have dissolved.
Pour the batter into the prepared loaf pan and if desired top with the optional banana, cut side facing up (refer to photos in post).
Place into the oven and bake for 50-60 minutes, or until a toothpick runs clean. Remove from the oven and cool completely before cutting.
