PLANT BASED, VEGGIE BEAN BURGERS

SUPER SIMPLE TO MAKE, EXTREMELY HEALTHY, VEGAN, GLUTEN FREE AND EXTREMELY DELICIOUS

THIS RECIPE IS A STAPLE IN MY MEAL PREPPING. BEAN BURGERS ARE SUCH A GREAT ON THE GO MEAL WHICH GO WITH SO MANY FLAVOURS. YOU CAN GET REALLY CREATIVE AND LITERALLY ADD ANY VEGGIES OR SPICES YOU DESIRE TO THEM, SO YOU NEVER GET BORED OF THE SAME OLD MEAL. THEY ARE SO QUICK TO MAKE AND I OFTEN MAKE A BIG BATCH AND FREEZE HALF OF THEM WHICH MAKES HEALTHY EATING EVEN MORE CONVENIENT.  THEY ARE GREAT WITH SALADS, VEGGIE SPAGHETTI SPIRALS, LETTUCE BURGER CUPS AND JUST ON THERE OWN WITH SOME CHUNKY HUMMUS OR GUAC ;P.

THIS ONE IS SUPER HEALTHY RECIPE GIVEN HOW AMAZING IT TASTES YOU WON'T BELIEVE ITS SO HEALTHY. 

Ingredients

Makes around 6 burgers depending on how big you want them and can always double up on ingredients to make more. They freeze also really well.

✘1 can Red kidney beans 

✘ 1/2 cup cooked sweet corn

✘ 1/2 cloves garlic 

✘ 2 tbsp tahini – I love using the Mighty Sesame shop now on my amazing list here

✘ juice of half a large lemon

✘ small handful of cilantro

✘ 1/4 of an aubergine cut into small cubes 

✘3 mushrooms sliced in to small pieces

✘ 1/2 tsp paprika

✘1/2 tsp cumin

✘ 1/2 tsp pepper

✘1/2 tsp of mixed herbs

✘ 3 tbsp nutritional yeast

✘ 4-5 tbsp of water (to help blend)

✘1 tbsp of tomato puree (I sometime add another 1/2 tbsp taste check first)

✘1tbsp of oats

Method

1. In a food processor or high powered blender, blend the oats until they form a flour consistency. Then add in the Kidney beans, spices, lemon, tomato puree, garlic, water  and tahini. 

2.Once mixed all together and looks like a dough mixture and in the cooked aubergine cubes, mushrooms (these can be raw) and sweet corn. Mix it all in together by hand so that all of the dough mixture is covering all of the veggies.

3.On to a baking tray lined with baking paper (So it doesn’t stick) form patties with your hands and pack in to round burger shapes, you can also use moulds to get the perfect shape but I ain’t got time for that ;).

4.Bake for 20mins flipping them over half way through and once they are firm and slightly crispy they are done :).

5.Serve with anything you like my favourite is with a mixed buddha bowl click HERE for my buddha bowl recipe. They are also great for on the go lunches and snacks with just some salad leaves. Guacamole is also delicious on top!
